Crispy Hot Honey Lemon Feta Chicken Cutlets with Mediterrane

For the Chicken:
2 large chicken breasts, sliced into thin cutlets
1 cup buttermilk
1 tsp hot sauce
1 cup all-purpose flour
1/2 cup panko breadcrumbs
1 tsp dried oregano
1 tsp dried basil
1/2 tsp thyme
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cayenne pepper
1 tsp salt
1/2 tsp black pepper
Oil for frying
For the Hot Honey Lemon Sauce:
1/3 cup honey
1 tbsp hot sauce
1 tsp chili flakes
Zest of 1 lemon
2 tbsp lemon juice
1 tbsp butter
For the Feta Finish:
1/2 cup feta cheese, crumbled
1 tbsp fresh parsley or basil, chopped

Marinate the Chicken:
In a bowl, combine buttermilk and hot sauce. Add chicken cutlets and marinate for at least 30 minutes.
Prepare the Herb Crust:
In a shallow bowl, mix flour, panko, oregano, basil, thyme, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
Coat the Chicken:
Remove chicken from marinade, allowing excess to drip off. Dredge each cutlet in the herb crust mixture, pressing firmly to create a crispy coating.
Fry the Chicken:
Heat oil in a skillet over medium-high heat. Fry cutlets for 4–5 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate.
Make the Sauce:
In a small saucepan over low heat, combine honey, hot sauce, chili flakes, lemon zest, lemon juice, and butter. Stir until warm and slightly thickened.
Assemble the Dish:
Drizzle the hot honey lemon sauce over the crispy chicken cutlets.
Finish with Feta:
Sprinkle generously with crumbled feta and fresh herbs.
Serve:
Serve immediately with extra lemon wedges and your favorite side.
