These healthy wraps contain plenty of protein and are healthy low-carb addition to your diet.
For the filling recipe, I posted this a few days ago But will post it again here if I have space.
What I love about these wraps is they’re crispy and cheesy which is the perfect flavour and texture combination in my view. You can fill them with whatever you want. I’ve been making delicious sandwich fillings over the last couple of weeks with healthy proteins, plenty of vegetableswhich are almost a salad in their own right. They also last in the fridge for a couple of days and really preppable in advance, which can save you time on the day.
Recipe for the wraps.
Finely slice your courgette into rings. One large courgette should make two wraps but see how you go!
Slightly overlap the courgette rings on a baking tray, lined with baking parchment. aim for a rectangular shape so that is easier to roll, or a circle if you are creative.
Drizzle with olive oil and sprinkle over fresh or dried herbs.

Add a little sea salt, I used @maldensalt
Next sprinkle over grated cheese. I used 40 g per wrap (80 g in total).
Next sprinkler over some seeds such as chia and sesame.
Bake in l a hot oven at 200°C for around 25 minutes until golden and crispy. Allowed to cool slightly then add your filling.
My filling was a mix of a cooked salmon fillet and cottage cheese as the protein source.
I then plenty of diced raw vegetables. I used red onion, cucumber, courgette, red pepper, yellow pepper, zucchini, cucumber, tomatoes, beetroot. But you can use virtually any vegetables that you have.
I cooked the salmon fillet and chilli oil to give it some flavour and also added extra chilli flakes, salt and pepper.
For an extra fibre boost, you could also add in some green lentils or small white beans, such as Flageolet.
I think you can be pretty creative when it comes to healthy sandwich fillings.
