1 TSP OLIVE OIL
3 TBSP BUTTER, DIVIDED
1 LB BONELESS CHICKEN THIGHS, CUT INTO BITE SIZE PIECES
SALT AND PEPPER
2 ½ TBSP HONEY
1 LARGE CLOVE GARLIC, MINCED
1 ½ TBSP APPLE CIDER VINEGAR
FRESH PARSLEY

1. HEAT OLIVE OIL AND 1 TBSP BUTTER IN LARGE NON - STICK SKILLET OVER HIGH HEAT.
2. WHEN THE BUTTER IS MELTED, ADD THE CHICKEN. SPRINKLE WITH SALT AND PEPPER, THEN COOK UNTIL IT CHANGES FROM PINK TO WHITE TO BROWN.
3. ADD THE REMAINING 2 TBSP OF BUTTER, HONEY, GARLIC, AND VINEGAR. BRING TO A SIMMER. TURN THE CHICKEN TO COAT IN THE SAUCE UNTIL IT IS GOLDEN AND CARMELIZED.
4. ONCE THE CHICKEN IS BROWNED ALL OVER, REMOVE IT FROM THE HEAT.
5. PILE CHICKEN ON TO MASHED POTATOES OR RICE AND DRIZZLE WITH THE SAUCE IN THE PAN. GARNISH WITH PARSLEY.
