Taco Lasagna

1 ½ lbs ground beef

12 taco sized flour tortillas (or 9 burrito sized)

1 - 16 oz can beans (pinto, black beans, or refried)

1 - 1 oz packet taco seasoning

3 ½ cups shredded cheese, divided into thirds (mexican blend, cheddar, pepper jack, etc)

Pre-heat oven to 375 degrees. In a large skillet over medium heat, add in the ground beef and brown on both sides, using a spatula to break up the beef as it cooks to turn it into small crumbles. As it is cooking, add in one packet of taco seasoning. Once there isn't much pink left, turn off the heat.

Spray a 9x13 casserole dish with non-stick spray. Lay flour tortillas on the bottom, creating an even base layer. You may need to rip the tortillas in half for the sides of the pan.

Add half of the ground beef using a slotted spoon to strain the excess grease. Scatter it evenly among the base layer of tortillas at the bottom of the pan. Add in half the pan of strained beans, then sprinkle on 1/3 of the shredded cheese.

Repeat with another layer of flour tortillas, the remaining beef, beans, and another 1/3 of the cheese.

To finish off the layers, add one last layer of tortillas and the remaining cheese on top.

Bake for 25 minutes or until cheese is fully melted. Slice into serving sizes and add the toppings of your choice.
