Hot Honey Chicken Tenders

Recipe
900g chicken tenderloins
50g flour
1 tbsp paprika
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp salt and pepper
1 tbsp cornflakes
5 eggs
Hot honey coating
200g hot honey (recipe below)
2 sprigs thyme
1 tbsp lemon juice
1 tbsp butter
Sauce:
3 tbsp sour cream
2 tbsp mayo
2 tbsp ketchup
smoked paprika
a few dashes of buttermilk
1 tsp lemon juice
1 tsp salt and pepper

Mix the flour with half the herbs and coat the chicken well with it. Set aside for later. 2. Crack the eggs into a bowl and whisk in the remaining herbs. Crush some cornflakes in another bowl.
Dip the chicken in the egg first, then press it into the cornflakes. Spray both sides with olive oil and air fry for about 10 minutes at “Max crisp, 220-240 degrees Celsius”.
Make the coating by mixing the hot honey, butter, thyme, and salt and letting it warm through. Once the heat is off, add a little lemon juice.
For the sauce, combine the mayo, sour cream, and ketchup. Add lemon juice, smoked paprika, salt, and pepper to taste. Thin with buttermilk.
Remove the tenders from the air fryer and toss with the hot honey.
Serve with the sauce and enjoy!
Hot honey
200g honey
4 sprigs thyme
1-2 sprigs rosemary
1/3 tsp fennel seeds
15-25g chili flakes
1 tbsp lemon juice
Salt and pepper
Add all ingredients except the lemon juice to a saucepan and simmer gently for at least 30 minutes. (Do not allow to boil.)
Pour into a jar and let cool.
