I drop one of these super simple, healthy, prep-able marinated salad recipes every single week and this week’s is a nutty, mildly spicy, flavor packed soba noodle salad with a ginger peanut dressing.

This one isn’t as high in protein as usual, if you want to bulk it up fold in some chopped extra firm tofu as well.

Peanut Soba Noodle Salad: 1/2 package Soba Noodles 1/4 small red cabbage 2 carrots 1 red bell pepper 1 large cucumber 1 10 oz bag edamame Peanut Dressing to taste Additional Salt, lime juice, peanuts, chili flakes, sesame seeds (optional/to taste).

Peanut Dressing 1/2 cup peanut butter 5 tbsp light soy sauce 1/4 cup honey 3 tbsp sriracha 1 garlic clove 1/2 tbsp grated ginger Juice of 1 lime Water as needed to thin

Make your dressing, then slowly add into salad until dressed to your liking. Taste and adjust for salt, acid (by adding more lime juice), and optionally add chili flakes, peanuts, and sesame seeds to taste.
