Bacon & Broccoli Gnocchi

1 onion, finely diced
10 bacon medallions, chopped
400g broccoli, cut into really small florets
Olive oil spray
500g gnocchi
25g cornflour
350ml semi-skimmed milk
80g crème fraîche
1 tbsp dried thyme
1 tosp garlic granules
80g Parmesan, grated
Salt and ground black pepper

Preheat your oven to 200°C/180°C Fan.
Add the onion, bacon and broccoli to a large baking dish, then spray well with oil spray and season with salt and pepper. Give it a mix then bake in the oven for 10 minutes.
Add the gnocchi, spray with a little more oil and mix, then pop the dish back in the oven for another 10 minutes.
Meanwhile, make your sauce. Add the cornflour to a jug and pour in just enough of the milk to make a smooth paste. Add the crème fraîche, mix, then pour in the remaining milk, along with the thyme, garlic granules, half the Parmesan and a hefty pinch each of salt and pepper. Stir until you have a smooth sauce
Pour the sauce over the gnocchi, broccoli and bacon mix once the gnocchi has had its 10 minutes. Top with the remaining Parmesan and bake for a further 15 minutes until golden, bubbling and delicious.

This is a true hug in a bowl. Baking the gnocchi allows it to get a little crispy before you add the creamy sauce, and the bacon and broccoli help make it a complete meal.
