Cheesy Sloppy Cheeseburger Pasta

12 oz pasta (elbow macaroni, rotini, or shells work great)
1 tablespoon olive oil
1 pound ground beef
1 small yellow onion, finely diced
2 cloves garlic, minced
1/2 teaspoon paprika
1 tablespoon yellow mustard
1/4 cup ketchup
1 tablespoon Worcestershire sauce (optional)
1 (15 oz) can tomato sauce
1/4 cup sour cream
2 cups shredded cheddar cheese
Salt and black pepper, to taste
Fresh parsley or green onions, chopped (for garnish)

Cook the Pasta:
Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.
Brown the Beef:
In a large skillet over medium heat, add olive oil and ground beef. Cook until browned, breaking it apart as it cooks. Drain any excess fat.
Add Aromatics:
Stir in the diced onion and garlic. Cook for 3–4 minutes until softened and fragrant. Season with salt, pepper, and paprika.
Build the Sauce:
Add mustard, ketchup, Worcestershire sauce (if using), and tomato sauce. Stir to combine and let it simmer on low for 5–7 minutes to meld the flavors.
Add Creaminess & Cheese:
Stir in the sour cream and 1 1/2 cups of the shredded cheddar. Mix until melted and creamy.
Combine with Pasta:
Add the cooked pasta to the skillet and stir to coat everything evenly in the cheesy, sloppy sauce. If needed, add a splash of water or broth to loosen the sauce.
Top and Serve:
Sprinkle the remaining 1/2 cup of cheddar cheese over the top and cover for 2 minutes to melt. Garnish with parsley or green onions and serve hot!
