Hot and Spicy Corn Gratin

1 cup egg beaters or 4 eggs
1 ½ cups fat free half-&-half
1 4-ounce can diced green chilies
½ cup chopped green onion
1 tablespoon HOMEMADE GOURMET MARIA'S SALSA MIX
1 15.25-ounce can whole-kernel corn, drained
1 cup shredded Monterey Jack cheese
¾ cup shredded cheddar cheese
¼ cup chopped cilantro, optional

Preheat oven to 350 degrees.
Grease 13x9x2 baking dish; set aside.
In a mixing bowl, combine eggs, half-&-half, chilies, onion, and hot sauce mix. Stir until well-blended.
Add corn and Monterey cheese; stir until well-blended.
Spoon into prepared baking dish; sprinkle top with cheddar cheese.
Bake 40 minutes until top is golden brown.
Serve with cilantro, if desired.
