For the Chicken Marinade:
1 ½ lbs boneless, skinless chicken thighs
3 tbsp olive oil
3 cloves garlic, minced
Juice of 1 lemon
2 tsp ground cumin
2 tsp ground paprika
1 tsp ground coriander
1 tsp ground turmeric
1 tsp ground cinnamon
1 tsp ground black pepper
1 tsp salt
½ tsp cayenne pepper (optional, for spice)
For Serving:
Warm pita bread or flatbreads
Fresh cucumber slices
Tomato slices
Red onion, thinly sliced
Pickles (optional)
Garlic yogurt sauce or tahini sauce

Marinate Chicken: In a bowl, whisk together olive oil, garlic, lemon juice, and all spices. Coat chicken thighs in the marinade. Cover and refrigerate for at least 1 hour (up to overnight).
Cook Chicken: Preheat grill pan or skillet over medium-high heat. Cook chicken 5–6 minutes per side until charred and cooked through. Rest for 5 minutes, then slice thinly.
Assemble Wraps: Fill warm pita with chicken, cucumber, tomato, onion, and pickles. Drizzle generously with garlic yogurt or tahini sauce.
Serve: Wrap tightly and enjoy warm.
