Quorn Masala

200g Quorn pieces (defrosted)
1 tbsp oil (coconut or olive)
1 small onion, finely chopped
2 garlic cloves, minced
1-inch piece ginger, grated (or ½ tsp ground ginger)
2 heaped tsp garam masala
1 tsp turmeric
1 tsp ground cumin
1 tsp coriander
1 tsp smoked paprika or mild chilli powder (optional)
1 tbsp tomato purée
200ml passata or finely chopped tomatoes
150ml full-fat coconut milk (from a tin)
1 tsp maple syrup or sugar (balances the acidity)
Salt to taste (skip for baby portion)
Fresh coriander for garnish (optional)

1. Marinate the Quorn (Optional but Recommended):
Mix yogurt/lemon juice, spices, and Quorn in a bowl.
Let sit for 15–30 minutes while you prep the sauce (or skip if short on time).
2. Sauté the Base:
Heat oil in a nonstick pan over medium heat.
Add chopped onion and cook for 5–8 minutes until soft and golden.
Add garlic and ginger, cook for 1–2 more minutes.
3. Add Spices:
Stir in garam masala, turmeric, cumin, paprika, and tomato purée.
Let it cook for about 1 minute until fragrant.
4. Make the Sauce:
Pour in passata and coconut milk.
Add a pinch of sugar/maple syrup.
Stir well and bring to a simmer. Let it bubble gently for 10–15 minutes, stirring occasionally.
5. Add Quorn:
Add your marinated Quorn pieces.
Simmer gently for another 10 minutes until heated through and infused with the sauce.
6. Adjust Seasoning and Serve:
Taste and add salt (after removing baby’s portion).
Garnish with fresh coriander if using.
