One-pan Creamy Meat & Potato Skillet

1 pound ground meat (beef, turkey, chicken, or pork)
12 small potatoes (or as many as you like), diced
1 can cream soup (cream of mushroom, chicken, or celery — your choice)
¾ cup milk (or swap with water mixed with sour cream if milk isn’t on hand)
Salt and pepper to taste
Optional: Shredded cheese, fresh herbs, or frozen veggies for extra flavor

Brown the Meat:
Heat a large skillet over medium heat.
Add the ground meat and cook until fully browned, breaking it apart with a spoon. Drain off excess grease if needed.
Cook the Potatoes:
Add the diced potatoes directly to the skillet with the browned meat.
Stir occasionally and cook until the potatoes are fork-tender, about 15–20 minutes. If cooking slows, splash in a little water, cover the pan, and let them steam until soft.
Make it Creamy:
Once the potatoes are done, stir in the cream soup and milk (or the water–sour cream mixture).
Mix until smooth, then cook for another 5 minutes until the skillet is hot and creamy.
Season & Serve:
Season with salt and pepper to taste.
