Jam Doughnut French Toast

4 slices of white bread
40g strawberry jam
Olive oil spray
30g caster sugar
2 large eggs
100ml semi-skimmed milk
½ tsp vanilla extract
120g 0% fat Greek yoghurt
Handful of strawberries, sliced

Take two slices of your bread and spread half the jam onto one slice,
then top with the other slice to make a little jam sandwich; repeat with the other two slices and remaining jam, then set aside.
Spray a non-stick frying pan well with some oil spray, then place over a medium heat. Spread the sugar out on a flat plate and set aside.
Add the eggs, milk and vanilla to a large bowl and whisk them together until well combined. Working one at a time, dunk a sandwich into the egg mixture, being sure to get it well coated but not soggy. Add the sandwich to the pan and cook for about 4 minutes on each side, or until crispy and golden. Transfer the sandwich to the plate of sugar, flipping the sandwich and pressing the sugar onto it to ensure it is coated. Repeat with the other sandwich.
Slice your French toast and serve each portion with half the Greek yoghurt and some strawberries.

Now who says you can't have doughnuts for breakfast? Filled with strawberry jam, fried until golden, then rolled in crunchy sugar; there's no better way to start the day. Feel free to change up the jam choice,
too: raspberry is particularly delicious.
