Thai Basil Pork

15-Minute Thai Basil Pork (Pad Kra Pao)
Ingredients
500g Pork mince
3–4 cloves Garlic, minced
1–3 Thai bird’s eye chilies, finely chopped (adjust for heat)
1 cup Fresh basil leaves
Sauce: 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp dark soy sauce (optional, for color), 1 tsp sugar.

Instructions
Sauté: Heat 1 tbsp oil in a wok or large pan over high heat. Add the garlic and chilies; fry for 30 seconds until fragrant.
Brown: Add the pork. Break it up with a spatula and cook until browned and starting to crisp.
Season: Pour in the sauce mixture and stir-fry for 1 minute until the pork is coated and the liquid has slightly reduced.
Finish: Turn off the heat and toss in the basil. Stir until just wilted.
Serve: Pile over jasmine rice with a crispy fried egg on top.
