Hot Honey Garlic Butter Tacos

Crispy, cheesy, sweet and a touch of spicy perfection ready in under 20 minutes 🤭 stuffed with hot honey pulled chicken & melty cheese, pan fried until golden and finished with garlic butter 😮💨

Ingredients (serves 2):
200g chicken breast cut into strips
1 tsp smoked paprika
1 tsp garlic granules
Salt
Pepper
½ small red onion chopped
1 small red pepper chopped
1 and ½ tsp chopped garlic
2 tbsp honey
2 tbsp hot sauce
50ml chicken stock
15g reduced fat butter
1 tbsp fresh parsley chopped
4 small tortilla wraps
50g grated mozzarella
Hot sauce mayo:
30g lighter mayo
1 and ½ tsp hot sauce
Season the chicken with the smoked paprika, garlic granules, salt and pepper to taste. Pan fry until cooked through. Once cooked, remove from the pan and shred using two forks.
Whilst you shred the chicken, add the pepper, onion and ½ tsp chopped garlic to the pan for a couple of minutes until soft.

Add the chicken back in, before adding the honey, hot sauce and chicken stock. Leave to thicken.
In a bowl, add the butter and remaining tsp chopped garlic. Blast on full power in the microwave for 10 seconds. Stir in the fresh 💕parsley.
Add the cheese to the bottom of the wraps. Top with the chicken before folding.
Place the wraps cheese side down in the pan. Cook for two minutes on each side until browned and crispy.
Make up the mayo sauce.
Brush ½ of the garlic butter over the top of the wraps and flip back over for 30 seconds.
Remove from the pan. Open the taco and drizzle over the hot mayo sauce.
Close, before brushing with the remaining garlic butter
