Easy Homemade Marshmallows

2 cups cane sugar
3/4 cup maple syrup
1/2 cup water
1/2 cup cold water
7 tsp gelatin
1 tsp vanilla
1/4 cup arrowroot powder
1/4 cup powdered sugar

In a sauce pan, mix together the sugar, maple syrup, and water. Bring the mixture to a boil on medium heat. Make sure you are constantly stirring and swirling the pan to prevent burning.
Cover the saucepan and lower to low heat. Let this cook for 2 minutes.
Uncover the pan and stir. Let the mixture continue to cook uncovered on low for another 5 minutes.
While this is cooking, make the gelatin mixture. In a large mixing bowl, whisk together the cold water and gelatin.
Remove the saucepan from the heat and turn off. Pour the sugar mixture slowly into the mixing bowl, while whisking with an electric hand mixer.
Beat on medium-high for 3 minutes or until the mixture starts to get fluffy! Add the vanilla and beat for another minute. At this point, the mixture should be white and very thick.
Next, quickly line an 8x8 baking pan or dish with parchment paper and pour the mixture in. Mix together the arrowroot power and powdered sugar (or use all powdered sugar) . Sprinkle the marshmallow mixture with about 2 tablespoons of this and reserve the rest.
Cover the dish with aluminum foil or plastic wrap and allow to set for 4+ hours.
Once the marshmallows have properly set, take them out of the baking dish and cut into cubes. Toss the cubes into the rest of the arrowroot and sugar mixture. Store airtight container and enjoy for up to 2-4 weeks.
