Tuscan Chicken Orzo

2 lbs chicken breasts or thighs

1 (7oz.) jar sun-dried tomatoes (use 1tbsp. Of the oil too)

4 cloves garlic, minced

2 cups chicken broth

1 tsp Italian seasoning

Salt + pepper

1 cup dry orzo

1 cup milk or half-and-half

3 big handfuls spinach

½–¾ cup freshly grated parmesan

How to make it:

Add chicken, sun-dried tomatoes (with 1 Tbsp. of oil), garlic, broth, Italian seasoning, salt & pepper to the crockpot.

Cook on low for 4–5 hours (or 3hrs on high), then shred the chicken in the crockpot.

Stir in orzo + milk. Cook 20–30 minutes on HIGH until the orzo is tender (this is for al dente). Cook 30-35 min if you prefer a softer bite. If you cook longer, add a little more broth.

Fold in spinach and parmesan until creamy and silky.

That’s it. Cozy, creamy, and so satisfying.
