Sweet-Pepper Bruschetta
Makes 4 bruschettas.

2 tablespoons extra-virgin olive oil
½ medium onion, thinly sliced
3 bell peppers, 1 red, 1 yellow, and 1 orange, cored, seeded, and cut into matchstick strips
Salt
3 anchovies, finely chopped
1 heaping tablespoon capers
4 slices country bread, cut ½/ inch thick
2 garlic cloves, peeled and cut in half
Extra-virgin olive oil for drizzing
10 basil leaves, torn into fragments

In the olive oil, sauté the onion over low heat until it wilts, about 3 minutes. Add the pepper strips and salt to taste. Cover and cook over medium heat, stirring occasionally, for about 15 minutes, or until peppers are tender. Off the heat, stir in the anchovies and capers. Grill or toast the bread on both sides. Rub the hot bread on one side with the cut garlie cloves and drizzle with a few drops of olive oil. Spoon the pepper mixture and juices over the bread and sprinkle with basil.
Makes 4 bruschettas.
