Sticky Sesame Tofu

500g extra-firm tofu
1 tosp olive oil, plus spray for cooking the tofu and garlic
2 tbsp light soy sauce
30g cornflour
4 garlic cloves, crushed
2 tsp sesame oil
2 tosp sesame seeds
FOR THE SAUCE
2 tsp oil
6 tosp hoisin sauce
2 tbsp light soy sauce
2 tbsp rice vinegar
2 tsp cornflour

Preheat your air fryer to 200°C.
Tear the tofu into bite-sized pieces (the torn edges will go crispy) then add to a bowl with the tablespoon of olive oil and the soy sauce. Mix well, then add the cornflour and toss until the tofu is fully coated.
Spray the base of your air fryer well with oil spray, then add the tofu pieces in an even layer with space around each piece. Spray well with some oil spray and air-fry for 10-12 minutes, shaking them halfway through.
While the tofu is cooking, in a bowl, mix all the sauce ingredients together, along with 75ml water.
Add some oil spray to a large frying pan, then add the garlic and cook for 1 minute over a medium heat. Pour in your sauce and let it bubble for a minute or two before turning the heat down and adding the cooked tofu, sesame oil and sesame seeds. Mix everything well, then serve straight away.

I will admit I've not always been tofu's biggest fan, but this sticky sesame version is the dish that changed my mind. The air fryer gets tofu super crispy, and the contrast with the sticky sauce is just great. I serve mine with some rice and edamame, and it is such a winner.
