Pistachio-crusted Brie Bites with Cranberry Honey Glaze — El

For the Brie bites:
1 small wheel of Brie cheese (about 200 g)
½ cup finely chopped pistachios
1 sheet puff pastry, thawed
1 egg, beaten (for egg wash)
For the cranberry honey glaze:
½ cup cranberry sauce (store-bought or homemade)
2 tbsp honey
1 tsp balsamic vinegar (optional, adds depth)
¼ tsp orange zest or a squeeze of orange juice

Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
Prepare the Brie:
Cut Brie into small 1-inch cubes (about 16 pieces).
Coat with pistachios:
Gently press each Brie cube into the chopped pistachios so they stick to all sides.
Wrap in puff pastry:
Cut the pastry into small squares (about 5×5 cm). Place one coated Brie cube in the center of each, fold corners over, and pinch to seal.
Brush with egg wash and place seam-side down on the baking sheet.
Bake for 12–15 minutes, or until golden and puffed.
Make the glaze:
In a small saucepan, combine cranberry sauce, honey, and balsamic vinegar. Warm over low heat until smooth and glossy (3–5 minutes). Add orange zest at the end.
Serve:
Drizzle warm cranberry honey glaze over the baked Brie bites or serve on the side for dipping.
