Maple-glazed Sweet Potato Donuts

1 cup mashed sweet potatoes (cooked and cooled)

1/2 cup granulated sugar

1/4 cup brown sugar

1/4 cup milk

1/4 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 cup maple syrup (for glaze)

1 cup powdered sugar (for glaze)

Preheat your oven to 350°F (175°C) and grease a donut pan.

In a large bowl, mix the mashed sweet potatoes, granulated sugar, brown sugar, milk, vegetable oil, eggs, and vanilla extract until well combined.

In another bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

Spoon the batter into the prepared donut pan, filling each cavity about halfway.

Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the pan for a few minutes before transferring to a wire rack.

For the glaze, whisk together the maple syrup and powdered sugar in a small bowl until smooth.

Once the donuts are cool, dip the tops into the glaze and let them set on the wire rack.
