Raspberry White Chocolate Cottage Cheese Breakfast Delight

Ingredients:
2 cups full-fat cottage cheese, excess liquid drained
3 large eggs
⅓ cup maple syrup or honey
½ cup all-purpose flour
1 tsp vanilla extract
1 tsp baking powder
Pinch of salt
1 cup frozen raspberries
¾ cup good-quality white chocolate chips or chopped white chocolate bar

Instructions:
1. Preheat your oven to 175°C (350°F) and grease an 8x8-inch (20x20 cm) or 9x9-inch (23x23 cm) baking dish.
2. In a blender, combine the cottage cheese, eggs, maple syrup, flour, vanilla extract, baking powder, and salt. Blend until the mixture is smooth and creamy.
3. Transfer the batter to a large mixing bowl and gently fold in the frozen raspberries and white chocolate chips until they are evenly distributed; avoid overmixing.
4. Pour the mixture into the prepared baking dish and spread it out evenly.
5. Bake for 35-40 minutes, or until the center is set with only a slight wobble and the edges are golden brown.
6. Allow the bake to cool for at least 15-20 minutes before slicing, which helps it to set properly.
