Prep the oven and tray: Heat your oven to 210°C (200°C fan-forced). Line a baking tray with baking paper.

2. Mix dry ingredients: Sift the flour, baking powder, and salt into a large mixing bowl.

3. Rub in the butter: Add the cold butter cubes. Use your fingertips to rub the butter into the flour until the mixture looks like fine breadcrumbs.

4. Toss in the cheese: Stir through the mozzarella and parmesan so the cheese is evenly coated in flour.
