4 cups chicken broth

Instruktioner

Step 1: Assemble the Soup Base

In your crock pot, combine the diced potatoes, onion, chicken broth, garlic powder, onion powder, smoked paprika, salt, and pepper.

Stir to mix everything evenly.

Step 2: Cook in the Crock Pot

Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the potatoes are fork-tender.

Step 3: Blend for Creaminess

Once the potatoes are cooked, use a potato masher or immersion blender to slightly mash the soup for a thicker texture. Leave some chunks for a hearty consistency.

Step 4: Add the Creaminess

Stir in the cream cheese, heavy cream, and cheddar cheese.

Mix well and cook on LOW for an additional 20–30 minutes, until the cheese is fully melted and the soup is creamy.

Step 5: Garnish and Serve

Ladle the soup into bowls and top with crumbled bacon, green onions, and extra cheddar cheese if desired.

Serve with crusty bread or crackers for a complete meal.
