Healthy Tiramisu Brownies

For the Brownie Base:
1/2 cup (120g) plain Greek yogurt (non-fat or 2%)
1/4 cup (60ml) brewed espresso or strong coffee
1 large egg
1/4 cup (25g) unsweetened cocoa powder
1/3 cup (40g) oat flour (or almond flour)
2 scoops (about 60g) chocolate or vanilla whey protein powder
1/4 cup (50g) granulated erythritol or monk fruit sweetener
1 tsp vanilla extract
1/2 tsp baking powder
Pinch of salt
For the Tiramisu Cream Layer:
1/2 cup (120g) low-fat cream cheese or light mascarpone
1/4 cup (60g) plain Greek yogurt
1 scoop (30g) vanilla protein powder
1-2 tbsp powdered erythritol (to taste)
1-2 tbsp espresso (or strong coffee)
Optional: 1/2 tsp rum extract or coffee liqueur flavoring
Topping:
Unsweetened cocoa powder for dusting
Instruktioner
Preheat oven to 325°F (165°C) and line or spray an 8x8” baking dish.
Make the brownie batter:
In a bowl, mix the Greek yogurt, egg, espresso, and vanilla extract.
Add cocoa powder, oat flour, protein powder, sweetener, baking powder, and salt.
Stir until combined. The batter will be thick.
Pour the batter into the prepared pan and spread evenly.
Bake for 15-18 minutes, or until a toothpick comes out with a few moist crumbs.
Do not overbake! Let cool completely.
Make the tiramisu cream layer:
In a bowl, beat together cream cheese, Greek yogurt, protein powder, sweetener, and espresso until smooth and creamy.
Spread the cream layer evenly over the cooled brownie base.
Dust with cocoa powder using a fine mesh sieve.
Chill for at least 1 hour (or overnight) before slicing into 9 squares.
