Chocolate Sponge Cake

Chocolate Sponge-
170 grams of unsalted butter
155 grams of dark chocolate
Dry ingredients-
170 grams of self raising flour
170 grams of soft light brown sugar
1/2 a teaspoon of salt
Wet ingredients-
3 medium eggs
100ml of veg oil
A teaspoon of vanilla extract
100ml of boiled water
50 grams of cocoa powder
Chocolate custard-
450ml of whole milk
150ml of double cream
4 medium egg yolks
100 grams of sugar
2 tablespoon of cornflour
50 grams of cocoa powder
50 grams of milk chocolate
50 grams of dark chocolate
Instruktioner
Start by mixing the wet ingredients together in a jug. Crack in the eggs, vegetable oil and a teaspoon of vanilla extract and set aside. In a large bowl, measure out the dry ingredients, self raising flour, soft light brown sugar and salt. Whisk that up roughly together. Separately, melt the butter with the dark chocolate in the microwave till smooth. Pour that into the dry ingredients along with the egg mixture and whisk by hand together. Then take the boiled water and add the cocoa powder and create a smooth and thick runny paste and add that in to create a smooth and glossy hot chocolate sponge batter.
Transfer the batter into a lined 9 inch baking tray and bake in the oven for 25 minutes or until completely cooked through. Bake at 170/180 degrees fan assisted and when you poke a skewer in it should come out clean.
