CLASSIC TIRAMISU

LADYFINGERS AND SOAK
1 cup brewed espresso
3 tablespoons demerara sugar
1 7-ounce packages Savoiardi or lady fingers
ZABAGLIONE AND MASCARPONE FILLING
½ cup dry Marsala or Kahlua → reduced to 2 tablespoons
4 large egg yolks
½ Cup demerara
Pinch of kosher salt
8 ounces mascarpone cheese
1 cup heavy cream
1 teaspOon vanilla extract
Instruktioner
Soak:
Combine 2 tbls sugar with espresso.
Filling:
Reduce marsala to 2 tbls. Whisk yolks and sugar together. Streamed reduced marsala into yolks and add vanilla extract. Set up a double boiler and whisk eggs over the double boiler. Whisk for around 10 mins until moussey and holds marks of whisk. Remove from double boiler and continue to whisk to cool down. Whip cream and mascarpone together till between medium and stiff peaks. Add egg mixture to cream and mascarpone. Fold together until a few streaks are left.
Assembly:
Pour soak mixture into a shallow bowl plate to dip in. Dip ladyfingers for 1 sec a side in soak mixture and put in 8x8 to create layer of ladyfingers at the bottom. Put about half of filling on top and smooth out. Do a second layer of ladyfingers. Put the rest of the filling on top and smooth out. Put plastic over the top and refrigerated for at least 12 hrs.
Serving:
Shave chocolate over top or dust with cocoa.
