Sausage, Eggs And Grits Casserole (Michelle Provost)

Ingredienser

4 c water

1 c quick grits (I did about 1 ½ c)

1 tsp salt

½ stick butter or margarine

8 eggs

1/8 tsp cayenne pepper (or as desired-optional)

½ c milk

1 lb sausage (ham or bacon)

½ red bell pepper (optional)

½ green bell pepper (optional)

½ medium onion (optional)

Salt & pepper

1 bag of real bacon bits

3 c shredded cheddar cheese (w/jalapenos if desired)

Instruktioner

Preheat oven to 350°. Bring water and 1 tsp salt to boil, add grits. Simmer covered for 5 minutes.

Brown sausage and drain.

Beat eggs slightly and add milk, salt & pepper (I used 1/8 tsp cayenne pepper). Mix margarine and 2 c cheese with grits until melted then mix with all other ingredients.

Bake for 45 mins. Top with another cup of cheese and bacon bits.

Total bake time 1 hour or until lightly browned
