Spicy Tuna Crispy Rice

2 cups sushi rice
2 tbsp rice vinegar
1 tbsp sugar
2 tsp salt
Avocado Oil @chosenfoods
Sushi-grade tuna, finely diced
Mayo @chosenfoods
Hot sauce (to taste)
Soy sauce (to taste)
1 tbsp everything but bagel seasoning
1 tsp fresh lime juice
2 tbsp green onion, chopped
2 jalapeños, sliced
Instruktioner
Start by rinsing rice in some cold water. Repeat 3-5 times so water is clear. Cook rice per package directions. Once cooked, add vinegar, sugar and salt. Combine and let cool for 10 minutes. Scoop it into a sheet pan lined with plastic wrap, firmly press down and make sure it’s evenly distributed. Take another sheet of plastic wrap and place over the rice. Add another pan moron to weigh down the rice. Place in the fridge for a minimum of 4 hours, the longer the better. Take it out and cut it into squares. Fry in oil at a 375 degrees for a minute on each side or until golden. Remove from oil and set aside.
In a medium size bowl, combine tuna, mayo, hot sauce, soy sauce, green onion and seasoning. Mix and place a dollop on a fried rice square. Garnish with a jalapeño slice.
