White Lasagna Soup

1 tbsp olive oil
1 lb italian sausage
2 tbsp flour
1 medium onion
3 cloves of garlic, minced
1 tsp italian seasoning
6 cups chicken broth
2 cups half & half
8-10 large lasagna noodles, broken
2 cups chopped kale, or spinach
parmesan cheese for garnish
red pepper flakes, salt, and pepper to taste
Instruktioner
Cook Italian sausage in olive oil and set aside.
To the pot add diced onion. Once cooked, add in garlic and Italian seasoning. Cook until fragrant.
Add in flour, and stir until onions are coated. Add chicken broth and stir until flour is dissolved, let come to a boil.
Break lasagna noodles into smaller pieces and add to broth. Cook for 8-10 minutes.
When noodles are cooked through, turn heat to low and add back in the sausage. Next, add in half and half and stir to combine.
Add in kale or spinach. Gently simmer for 10-15 minutes to let soup thicken.
Adjust seasonings as needed. Top with red pepper flakes and parmesan cheese.
