Crispy Homemade Egg Rolls

What You'll Need
1 pound ground chicken
2 cups cabbage, finely shredded
1 cup carrots, julienned
1/2 cup green onions, chopped
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon black pepper
12 egg roll wrappers
1 egg, beaten (for sealing)
Vegetable oil for frying
How to Make It

Cook pork in a skillet over medium heat until no longer pink. Drain fat.
Stir in garlic, soy sauce, sesame oil, ginger, salt, and pepper. Cook 1 minute.
Add cabbage, carrots, and green onions. Cook 3–4 minutes until softened but still slightly crisp. Cool filling.
Place an egg roll wrapper flat with one corner facing you. Spoon 2–3 tablespoons filling in the center.
Fold the bottom corner over, fold in the sides, and roll tightly. Brush top corner with egg to seal.
Heat oil to 350°F (175°C). Fry rolls in batches 3–4 minutes until golden and crispy. Drain on paper towels.
Serve hot with soy dipping sauce or sweet and sour sauce.
