450g zucchini

1 onion

300g 00 flour

330g water

75g breadcrumbs

Fresh rosemary

Salt & pepper

Olive oil

Semolina flour (for sprinkling)

Instruktioner

Slice the zucchini & onion thin with a mandolin.

In a large bowl, whisk together the flour & water to form a batter

Add the zucchini, onion, breadcrumbs, rosemary, salt, & pepper to the batter. Mix well.

Line a baking sheet with parchment paper. Drizzle with olive oil & sprinkle with semolina.

Spread the batter evenly. Drizzle more olive oil & sprinkle with semolina on top.

Bake at 400°F for 45 min, or until crispy & golden.
