Salmon Potato Boats + Fresh Arugula Salad

Ingredienser

450 g salmon, cut into small cubes

1 large potato, thinly sliced

1 onion, thinly sliced

2 tbsp mayonnaise

4 tbsp Greek yogurt or sour cream

Hard cheese, grated

1 clove garlic, minced

Salt & black pepper

For the salad:

Arugula

Orange segments

Feta cheese

Walnuts

Dressing:

Grainy mustard

Honey

Olive oil

Salt

Instruktioner

Shape parchment paper into small “boats.”

Mix yogurt/sour cream, mayonnaise, garlic, salt, and pepper in a bowl.

In each boat, layer salmon (lightly salted), onion, and potato slices. Top with the yogurt sauce and spread evenly.

Bake at 180°C (350°F) for 30 minutes.

Sprinkle with cheese and bake for another 5 minutes until golden and bubbly.

Toss arugula, orange, feta, and walnuts with the mustard-honey dressing and serve on the side.
