Homemade Steak Chipotle Bowl

Hereâs what you need for 2 bowls âš
10 oz. steak (I used NY strip, but flank or sirloin is also great)
Steak marinade (about 1/8 cup total is absorbed)
1/4 cup olive oil
1/3 cup soy sauce
1 tbsp Worcestershire sauce
1 tbsp balsamic vinegar
1 tbsp steak sauce (I used A1)
1 lime (squeezed)
2-3 chipotle peppers (canned)
1/2 lemon (squeezed)
1/2 orange (squeezed)
1/2 cup cilantro
3 thyme sprigs
2 rosemary sprigs
5 garlic cloves
1 tbsp cumin
1/2 tbsp chili powder
1/2 tbsp oregano
Corn Bell Pepper Salsa
1/2 cup corn (canned, I used fire roasted)
1/2 red bell peppers (minced)
2 jalapeños (minced)
1/4 cup cilantro (minced)
1/4 red onion (minced)
1/4 tsp chipotle powder (or 1/8 tsp cayenne)
1 lime (squeezed)
salt (big pinch)
Bowl (split)
1 cup white rice (with cilantro/lime)
1/3 cup black beans
Ice berg lettuce
1/2 avocado (mashed with salt and lime juice)
2-3 tbsp greek yogurt (or light sour cream)
2 tbsp queso
What youâll do âŹïž

Add steak marinade ingredients to a blender or processor, blend, add steak to ziplock bag with marinade and let sit at room temp for 1 hour (up to 2). Marinate in the fridge overnight if you prefer.
Heat a cast iron or stainless steel pan to high heat. Add avocado oil, sear each side for 3-4 minutes. Pop in preheated oven at 400F until desired temp is reached. Boil marinade ingredients, then strain to pour over steak while itâs resting for 10 minutes. Then dice.
Mix corn salsa ingredients together, then plate! Order: rice, lettuce, beans, steak, quest, corn salsa, cilantro, sour cream, avocado.
