Lentil Salad with Lemon Vinaigrette

Ingredienser

1 1/2 cups cooked brown lentils or a 15.5 oz can

2 persian cucumbers, diced

1 cup grape tomatoes, diced

1 avocado, diced

3 radishes, sliced

1/4 red onion, diced

1 cup walnuts, chopped

1/2 cup parsley, chopped

1/2 cup crumbled feta cheese

1/4 cup olive oil

Juice from 1 lemon

1 tsp lemon zest

1 clove garlic, crushed

1 tsp honey

1 tsp dijon mustard

Salt u0026 pepper

Instruktioner

Add the lentils to a bowl with the chopped veggies, feta, walnuts and parsley.

Add the dressing ingredients to a small bowl or jar and whisk well.

Pour the dressing over the salad and toss to combine.

Serve cold. Refrigerate for up to 3 days.
