Salmon And Leek Gratin

400g new potatoes, thinly sliced
1 large leek, thinly sliced
240g salmon (cooked or raw, skinless)
300ml crème fraîche
100g grated cheese (cheddar, gruyère, or a mix)
1 heaped tsp Dijon mustard
1 clove garlic, minced
1 tsp lemon zest or a small squeeze of juice
A handful of breadcrumbs
Instruktioner
Boil potatoes
Cook the sliced potatoes in salted boiling water for 6–8 minutes until just tender. Drain and set aside.
Sauté leeks
Heat a little oil or butter in a pan. Cook the leeks over medium heat until soft (about 7 minutes). Add garlic if using and cook for 1 more minute.
Make the sauce
In a bowl, mix crème fraîche with mustard and lemon zest if using. Season well with salt and pepper.
Assemble the dish
Grease a medium baking dish. Layer half the potatoes, half the leeks, and flake half the salmon over. Spoon on half the crème fraîche mixture. Repeat with remaining potatoes, leeks, salmon, and sauce.
Top with cheese & breadcrumbs
Sprinkle cheese evenly on top. Add breadcrumbs if you like a crispy crust.
Bake
Place in a preheated oven at 180°C fan / 200°C conventional for 25–30 minutes, or until golden and bubbling.
Serve
Let it cool for 5 minutes before serving. Lovely with a green salad or simple steamed veg.
