Lemon Frittata and Fig Jam Panino
Makes 2 panini.

2 eggs, preferably cage- free
2 teaspoons sugar
1 teaspoon finely chopped lemon zest, preferably from an organic lemon
1 tabiespoon lemon juice
Tiny pinch salt
1 tablespoon unsalted butter
Unsalted butter, slightly softened
4 large slices country white bread, cut from a large sfilone leach slice should measure about
6 × 3 inches), or 2 large round rolls

Break the eggs into a bowl and beat with a fork. Add the sugar, lemon zest, lemon juice, and salt, and mix well. Place the butter in an ovenproof sauté pan about 6 inches in diameter. Turn to medium-high and when the butter melts and turns golden, add the egg mixture. Stir until large curds form. When the frittata is firm but the top is still runny, place under a hot broiler until the top is just firm. Turn out the frittata on a plate and let cool. Cut the frittata in half. Lightly butter 2 slices of bread. Spread with a little fig jam. Top each slice of bread with half of the frittata. Cover with the remaining bread slices.
Makes 2 panini.
