Orange Marmalade Frittata Panino

Ingredienser

1 egg, preferably cage- free

1 teaspoon sugar

1 tablespoon orange marmalade

Tiny pinch salt

1 tablespoon unsalted butter

2 slices Italian-style whole grain bread

Unsalted butter, optional

Instruktioner

Break the egg into a small bowl and beat with a fork. Add the sugar.

orange marmalade, and salt, and mix until well blended. Place the butter in an ovenproof sauté pan about 6 inches in diameter and turn the heat to medium high. When the butter just begins to tum a light brown, add the egg mixture. Lower the heat to medium and stir the eggs until curds form. When the frittata is firm on the bottom but still runny on top, slide it under the broiler until just set (overcooking the frittata

produces a dry panino). Meanwhile, lightly butter 1 slice of bread, if desired. Fold the frittata over like an omelet. Transfer to the buttered slice of bread. Cover with the other bread slice. Serve warm or at room temperature.

Makes 1 panino.
