Black Beans & Corn Soup

Ingredienser

1 med. onion, chopped

2 Tbls. spoon oil

2 cans (15oz.) black beans, drained

1 can (14oz.) chicken broth

1 can (11oz) corn niblets, drained

1 cup bottled chunky salsa

1 Tbls. lime juice

⅛ tsp salt

Sour cream & lime wedges if desired

Instruktioner

In large sauce pan, saute onion in oil.

Over low heat about 5 minutes or until tender.

In small bowl, mash 1 cup of the beans.

Stir mashed beans, whole beans, broth, corn, salsa, lime juice, salt & pepper into

saucepan; simmer, uncovered, about 10 minutes or until heated through.

If desired, serve with sour cream & lime wedges.
