Lamb Riblets with Mint

~8-10 lamb riblets
½ tsp garlic, minced finely
1 tsp fresh rosemary, minced or ground
1 tsp dried mint, ground
1 tsp salt
¼ tsp pepper
2 tbsp olive oil
Instruktioner
Mix the garlic, ground rosemary, mint, (can substitute 3 T fresh mint for a teaspoon of the dried), salt, and pepper. We make 4x the recipe, could also try 5x the amount it’s so good. While making it, set aside ~ 1 tsp of each herb plus 2 T of fresh mint for the potatoes.
Rub riblets with the herb mixture and let sit for at least an hour.
Heat the grill on high. Grill the riblets for 2 minutes on one side then one minute on the other side.
Oven roast or microwave (for 5 minutes) baby potatoes. Put whole in a bowl, add some butter and the herbs, stir and serve with the lamb.
This dish goes really well with yogurt with cucumbers.
