Airfryer Burrito Bowl

Ingredienser

For the potatoes:

500g potatoes

Air Fryer Spray from @frylighthq

1 tbsp Cajun seasoning

Salt and pepper

For the chicken:

500g boneless chicken thigh

Air Fryer Spray from @frylighthq

2 tbsp Cajun seasoning

Juice of a lime

For the salsa:

250g cherry tomatoes, diced

1 red onion, diced

1 jalapeño, diced

Coriander, finely chopped

Juice of 1/2 lime

Salt

For the guacamole:

1 avocado, mashed

Coriander, finely chopped

Garlic powder

Salt and pepper

Instruktioner

Pop your chicken thighs in a food bag with Cajun seasoning and some Air Fryer Spray from @frylighthq . Leave to marinate for one hour in the fridge.

Cut your potatoes into small bitesize chunks and add to a bowl with some Air Fryer Spray from @FrylightHQ, Cajun seasoning, salt and pepper. Give that a good mix.

Airfry your potatoes for 22 minutes at 200. If you have two drawers, open one drawer when the time has 14 minutes left and pop your chicken thighs in it. That way, the airfryer is nice at hot giving the chicken a nice char.

While the potatoes and chicken are cooking, prepare a quick salsa by chopping your red onion and cherry tomatoes. Add a handful of coriander, juice of 1 lime, salt and pepper. You can also make a quick guacamole by mashing one avocado with some coriander, garlic powder, salt and pepper.

When the chicken and potatoes are finished cooking, assemble the bowl by adding some potatoes and chicken to a bowl. Top with some salsa, sour cream, guac and a sprinkle of fresh coriander and enjoy.
