Keto Lemon Cream Cheese Loaf
Ingredients
2 cups almond flour
4 oz cream cheese, softened
3 large eggs
1/2 cup melted butter
1/2 cup keto sweetener (erythritol or monk fruit)
2 tbsp lemon juice
1 tbsp lemon zest
1 tsp vanilla extract
1 1/2 tsp baking powder
Pinch of salt
(Optional Glaze) 1/2 cup powdered sweetener + 2 tbsp lemon juice
Instructions
1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
2. Beat cream cheese, butter, and sweetener until smooth.
3. Add eggs, lemon juice, zest, and vanilla; mix until combined.
4. Stir in almond flour, baking powder, and salt until just incorporated.
5. Pour batter into pan and bake 45–50 minutes until toothpick comes out clean.
6. Cool completely before glazing or slicing.
7. For glaze, mix powdered sweetener with lemon juice and drizzle
