Cajun Seafood Queso Dip

2 LB – Velveeta Cheese
8 oz – Pepperjack Cheese
12 oz – Shrimp
2 oz – Crawfish Tails
1 – Red Pepper
1 – Green Pepper
1 Can – Rotel
1 c – Shredded Mexican Cheese
1 C – Notorious P.I.G.
1 t – Cayenne
1 t – Oregano
1 t – Basil
1 t - Thyme
Instruktioner
Preheat smoker to 225 degrees
Combine the seasonings and stir well to make the Cajun seasoning.
Pell and devein the shrimp and then cut into smaller bite sized pieces.
Diced the peppers
Add all ingredients to an aluminum ½ pan along with ¼ cup of the Cajun seasoning. (Reserve the rest for other recipes)
Place the pan on the smoker, uncovered for about 2 hours. After the 1st hour, stir every 15 minutes.
Serve with a baguette or tortilla chips.
