Creamy Herb Alfredo Chicken Linguine with Bell Peppers

12 oz linguine pasta
2 chicken breasts, sliced or cubed
Salt, black pepper, garlic powder
2 tbsp olive oil
3 tbsp butter
1 red bell pepper, sliced
1 yellow bell pepper, sliced
4 cloves garlic, minced
1½ cups heavy cream
1 cup freshly grated parmesan cheese
1 tsp Italian seasoning or mixed herbs
½ cup chicken broth (optional)

Cook the pasta: Boil linguine in salted water until al dente. Drain and set aside.
Sear the chicken: Season chicken with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium-high heat and cook chicken for 5–7 minutes until golden and fully cooked. Remove and set aside.
Sauté the peppers: In the same skillet, melt butter. Add sliced bell peppers and cook for 4–5 minutes until slightly tender but still vibrant. Add garlic and sauté for 1 minute until fragrant.
Build the Alfredo sauce: Pour in heavy cream and chicken broth (if using). Let it simmer gently for 3–4 minutes until slightly thickened.
Add the cheese & herbs: Stir in parmesan and Italian seasoning until melted into a smooth, creamy Alfredo sauce. Adjust seasoning to taste.
Bring it all together: Return chicken and linguine to the skillet. Toss everything until well coated in the creamy herb sauce.
Garnish and serve: Finish with fresh parsley, extra parmesan, and a sprinkle of red pepper flakes for a little heat.
