Peach Salsa (Michele Bogle)

6 - 7 roma tomatoes (2 - 3 med/lg tomatoes)
1 - 2 jalapeños
1 ripe peach (2 if you want it extra peachy)
1 small onion
1 c fresh cilantro (I usually use more because I love cilantro)
2 tsp of balsamic vinegar
1 tblsp olive oil
Instruktioner
Dice tomatoes, peach, and onion place into medium sized bowl.
Dice jalapeno (if you want a mild salsa, remove all rinds and seeds) place into bowl.
Chop cilantro and place into bowl.
Add balsamic vinegar and olive oil.
Mix it up well and refrigerate to chill.
Options:
You can salt to taste…I don’t because I find that my chips are salty enough and I want to keep it healthy.
Add juice from half a lime (gives it some extra zing)
Replace peach with mango for a mango salsa (or use both!😁)
