Oven-Baked Cheesy Tomato Gnocchi

¾ lb Gnocchi
3 oz Baby Spinach
4 oz Grape Tomatoes
1 Tomato Sauce jar (at least 8oz)
2/3 cup Mirepoix
2 Celery stalks
2 good sized Carrots (peeled)
1/2 white or yellow Onion
2TBSP Butter
4 oz Fresh Mozzarella Cheese
1 Tbsp Italian Seasoning (Whole Dried Basil, Sage, Oregano, Savory, Rosemary, Thyme; Marjoram)
Red Pepper Flakes/ Red Chili Paste optional - to taste
Parmesan Cheese optional - to taste
Instruktioner
First make the Mirepoix. If you don't have Mirepoix you can make it yourself by slow cooking (about 15 mins) celery, onion, carrots in butter.
Place an oven rack in the center of the oven; preheat to 450°F.
Wash and dry the fresh produce.
In the tray, combine the spinach, gnocchi, tomato sauce, tomatoes, mirepoix, Italian seasoning, and as much of the red pepper flakes/chili paste as you'd like, depending on how spicy you'd like the dish to be. Season with salt and pepper; stir to thoroughly combine.
Bake the tray Tightly cover the tray with foil and bake 30 minutes. Leaving the oven on, remove from the oven.
Carefully remove the foil. Evenly top with the mozzarella (tearing into bite-sized pieces before adding). Return to the oven and bake, uncovered, 10 to 12 minutes, or until the cheese is melted.
Remove from the oven. Let stand at least 3 minutes before serving. Serve the baked tray topped with the parmesan. Enjoy!

I used smoked mozzarella and a vodka sauce at it was amazing.
When making the Mirepoix I use the amount of servings to determine the how much carrots and celery, and butter to use. Each serving is one carrot, celery stalk and TBSP of butter. So if you were to make 4 servings it would be 4 carrots, 4 celery stalks and 4 TSBP of butter.
