Fruit Coffee Cake (peach, Berry, Etc)

Ingredienser

2 ½ cups diced peaches (leave skin on) about 3 – medium peaches

Cake

1/3 cup oil

2 eggs

¾ cup sugar

2 tsp vanilla extract

¾ cup lighter sour cream of yogourt

1 ½ cup flour

1 ½ tsp baking powder

½ tsp baking soda

1/8th tsp salt

Streusel

½ cup brown sugar

¼ cup white sugar

1 tsp cinnamon powder

1/3 cup oil

1 cup flour

Instruktioner

Dice peaches. Preheat oven to 350F.

In a large bowl add oil, eggs, sugar and mix well.  Add vanilla and sour cream and mix until blended.

Add flour baking powder, baking soda and salt and mix until combined.

Add peaches and gently fold in.  pour into a 9” x 9” pan.

Streusel: in a smaller bowl add both sugars, cinnamon, oil and flour and mix until crumbly.

Sprinkle over top of cake and bake for 35 - 45 minutes or until tester comes out clean. Enjoy!
