One Pot Pizza Mac N Cheese

Ingredienser

500g chicken (diced)

1tbs smoked paprika

1 ½ oregano

Salt and pepper

60g pepperoni - Approximately 20 slices

1 red onion (finely diced)

2tbs tomato puree

300g pasta

400ml hot chicken stock

600ml milk, warmed

120g cheese- I used a mix of cheddar, and mozzarella, grated

Season to taste

Parsley, oregano and chilli flakes to garnish (optional)

Instruktioner

Start by frying half the pepperonis until they’re starting to go crispy and the oils have come out.

Add in the chicken and seasoning and cook until it’s browned, then add in the onions.

Once the onions are soft add in the tomato puree and cook for a minute.

Add in the uncooked pasta and give it a good mix, then add in the stock.

Cook this until it’s absorbed then turn the heat right down and add the milk, cook that until the pasta is al dented and you’re left with a creamy sauce if the pasta has absorbed too much liquid just add a little more water.

Add half of the cheese and mix until the cheese has melted, then season to taste.

Sprinkle over the remaining cheese and the rest of the pepperoni and pop under the grill until golden and bubbling.

Garnish, serve and enjoy.
