This is marinated skirt steak in citrus, cilantro, garlic, olive oil, and beer. It’s grilled hot, sliced thin, and served with tortillas, grilled onions, chili peppers, and salsa tatemada.
INGREDIENTS (makes 5–6 servings)
2 lb skirt steak
Juice of 2 limes
Juice of 1 orange
3 cloves garlic, minced
1/2 C fresh cilantro, chopped
1/3 C olive oil
6 oz light beer
1 tsp kosher salt
Kosher salt to taste

STEP 1: MARINATE
Combine lime juice, orange juice, garlic, cilantro, olive oil, beer, and salt in a bowl or Ziploc bag. Add the steak and coat evenly. Marinate 2–4 hours in the refrigerator, up to 6 hours.
STEP 2: GRILL
Preheat grill to high heat. Immediately before grilling, season with kosher salt. Remove from marinade and pat lightly to remove excess moisture. Grill 2–4 minutes per side until medium-rare to medium.
STEP 3: SLICE
Rest 5–10 minutes, then slice thinly against the grain.
STEP 4: SERVE
Serve with warm tortillas, grilled onions, salsa tatemada, and lime wedges.
