Dump and Bake Nando’s-style C

Ingredienser

3 Chicken Thighs, cut in half

1 ½ x Cups Long Grain Rice (uncooked)

2 ½ x Cups Chicken Stock

1 x Red Capsicum, chopped

1 x Small Onion, diced

1 bottle Nandos Peri Peri Sauce

1 Packet Nandos Peri Peri rub

Salt & Pepper, to taste

1–2 tbsp Olive Oil

Lemon wedges, to serve

Instruktioner

Preheat oven to 200°C (fan-forced). In a large baking dish, add the rice, capsicum, onion, chicken stock, Peri Peri sauce, salt and pepper. Mix until well combined.

Meanwhile, coat chicken thigh in peri peri rub. Drizzle olive oil over the top and mix until well coated.

Lay chicken over the top of the rice so it’s not covered by the liquid.

Cover tightly with foil and bake for an hour or so, or until the rice has absorbed most of the stock and the chicken is fully cooked.

Remove foil and bake uncovered for 10–15 minutes, until the top of the rice and chicken is golden and crispy.

Serve straight from the tray with lemon wedges. #dumpandbakerice
